Description

There is nothing better than a Thanksgiving dish like this Nana’s Classic Stuffing, with flavors that remind you of your childhood. The new spin is that it’s vegan friendly!

Ingredients

  • 1 Cup Celery (Diced)
  • 1 Cup Carrots (Diced)
  • 2 Apples (Gala or Red, Diced)
  • 1 Sweet Potato (Diced)
  • 1 Can Black Olives (Roughly chopped)
  • 1/2 Cup Green Onion (Chopped)
  • 2 Tbs Fresh Thyme (Roughly chopped)
  • 1 Cup Dried Cranberries
  • 1/4 tsp Cloves
  • 3/4 tsp Nutmeg
  • 3/4 tsp Cumin
  • 3/4 tsp Pepper
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 2 Tbs Vegan Butter
  • 1 Box Herb Seasoned Dressing
  • 2 Cups Veggie Broth

Instructions

  1. First, cut up all the veggies, fruit, and fresh thyme as directed.
  2. Pre-heat the oven to 350 degrees. Heat a large pot on the stove at medium-high heat.
  3. Then add vegan butter, veggies, fruit, thyme, and all of the spices to the pot. Saute for 15 minutes, until the veggies and fruit start to soften. You don’t want them mushy, be careful not to overcook them.
  4. Next, add the box dressing, and slowly add veggie broth to moisten the dressing. You may not need all of the broth.
  5. Finally, transfer everything into a 9×13 baking dish. Bake for about 25 minutes, until the top of the stuffing is slightly brown and crispy on top.
  6. Serve and enjoy!
