Authentic Mexican Rice – Vegan Style

Ingredients

  • 1 Tbs Oil
  • 1/4 Cup Yellow Onion, Diced
  • 1 Garlic Clove
  • 1 Cup White Rice
  • 2 Cups Water
  • 8 oz. tomato sauce (1 can)
  • 1 Vegan Bouillon Cube
  • 1/2 tsp Pepper
  • 1 tsp Salt

Instructions

  1. Heat pan on stove at medium-high heat and add oil.
  2. Dice onion and peel garlic clove
  3. Once oil is hot enough, add rice, lower heat to medium, and cook for 3-4 minutes until slightly brown. Stir frequently so the rice doesn’t burn.
  4. Next, add onions and cook for another 2 minutes, stirring frequently.
  5. Pour in water and tomato sauce, and stir to combine.
  6. Then add in garlic, bouillon cube, salt and pepper. Stir to combine.
  7. Bring to a boil, then cover, lower the heat to medium-low, and cook for 15 minutes until the liquids evaporate.
  8. Once done, put in a bowl and serve. Enjoy!
